Preheat the oven to 300°F and create a sling from parchment paper for an 8-inch baking dish.
Whisk together the honey, vanilla extract, almond meal, salt, vanilla beans, and peanut butter.
Combine the peanuts, almonds, and oats.
Pour the honey mixture over the nut mix and stir until combined.
Transfer the mixture into the baking dish and tightly pack the mixture down in the baking dish with slightly wet hands, creating an even surface.
Bake for 20 minutes. Remove from the oven and allow to cool in the baking dish on a cooling rack for 1 hour. Chill in the refrigerator for 1 more hour.
Gently use the sling to remove from the dish and cut evenly into bars.
To store, I evenly cut the parchment sling into 10 pieces and use them to line the bars. Keep the lined bars in an air tight container in the refrigerator.
Notes
*If you don’t have almond meal on hand, finely process 1/4 cup of sliced or whole almonds in a food processor, spice or coffee grinder.
