Ingredients
4Foster Farms DORI™ Chicken Breast Fillets
Salt and ground pepper to taste
3-5tablespoonsextra-virgin olive oil, divided
3large ripe avocados, diced
1large tomato, seeded and diced
1medium red onion, sliced into thin strips
1jalapeño pepper, seeded and diced
3tablespoonsfresh lime juice
¼cuppacked fresh cilantro leaves, chopped
Lime wedges for serving
Instructions
Place the breast fillets on a large plate and season the top side with salt and pepper.
Heat two tablespoons of olive oil in a large skillet over medium heat until shimmering. Working in batches, if necessary, place the breast on the hot skillet, seasoned side down. Season the top side with salt and pepper. Cook for 2-3 minutes, until the sides are opaque about halfway up. Flip the breast and repeat. Cover the skillet and continue cooking for 1-2 minutes*, until the internal temperature reaches 165°F, when a meat thermometer is inserted into the thickest part of the breast. Repeat with the remaining breasts, using an additional 2 tablespoons of oil, if necessary.
Place the cooked breasts on a clean plate and tent with foil to keep warm.
In a medium bowl, add the remaining 1 tablespoon of oil with the avocados, tomato, onion, pepper, and lime juice. Use a small spoon to gently toss the mixture to combine, being careful not to crush the avocados.
Spoon about half of the avocado salsa over the chicken breasts and sprinkle with cilantro leaves. Serve with lime wedges, tortilla chips, and remaining salsa.
Notes
*Pro-tip: Covering the skillet traps in heat, quickly cooking the center of the breasts while sealing in the juices. No more over dried white meat!
