I tossed together an arugula spring mix with spinach leaves, added tasty and colorful mix-ins like walnuts and dried cranberries, and added cubes of chicken from a store-bought rotisserie chicken.
To turn the Chicken Waldorf Salad Tart into an elegant appetizer, I served it over a slab of flaky puff pastry. For the dressing, a drizzle of blueberry lemon dressing. I made the dressing using Smucker’s Fruit & Honey Blueberry Lemon Fruit Spread. I love the fresh blueberry flavor, the tartness that the lemon flavor adds, and that it’s naturally sweetened with honey. - 1 frozen puff pastry sheet, thawed
- 2 ½ cups arugula spring mix
- 2 ½ cups spinach leaves
- ½ cup dried cranberries
- ½ cup pitted dates, chopped
- ½ cup walnuts, chopped
- ¾ cup vanilla yogurt
- 2 tablespoons Smucker's Fruit & Honey Blueberry Lemon Fruit Spread
- ½ lime juice
- ½ teaspoon salt
- 1 tablespoon olive oil
Roll out puff pastry sheet into a 12” x 10” sheet. Create a ½ - inch border by folding over the dough along each side. Puncture the center area multiple times with a fork to allow steam to escape. Bake according to package instructions*. Allow to cool completely.
Combine the arugula, spinach, cranberries, dates, and walnuts. Drizzle with the blueberry lemon dressing and toss.
Spread over the cooled puff pastry and cut before serving.
Whisk together all the ingredients until smooth and combined.
*The center area should not rise higher than the border. If it does, place a heavy baking dish over the area for 5 minutes to flatten.
