Ingredients
Chicken Waldorf Salad
  • 1 frozen puff pastry sheet, thawed
  • 2 ½ cups arugula spring mix
  • 2 ½ cups spinach leaves
  • ½ cup dried cranberries
  • ½ cup pitted dates, chopped
  • ½ cup walnuts, chopped
Blueberry Lemon Dressing
  • ¾ cup vanilla yogurt
  • 2 tablespoons Smucker's Fruit & Honey Blueberry Lemon Fruit Spread
  • ½ lime juice
  • ½ teaspoon salt
  • 1 tablespoon olive oil
Instructions
Chicken Waldorf Salad
  1. Roll out puff pastry sheet into a 12” x 10” sheet. Create a ½ - inch border by folding over the dough along each side. Puncture the center area multiple times with a fork to allow steam to escape. Bake according to package instructions*. Allow to cool completely.
  2. Combine the arugula, spinach, cranberries, dates, and walnuts. Drizzle with the blueberry lemon dressing and toss.
  3. Spread over the cooled puff pastry and cut before serving.
Blueberry Lemon Dressing
  1. Whisk together all the ingredients until smooth and combined.
Recipe Notes

*The center area should not rise higher than the border. If it does, place a heavy baking dish over the area for 5 minutes to flatten.
