1red bell pepper, sliced into strips

Instructions
In a large skillet, heat the oil over medium-high heat until shimmering. Add the onion and cook until softened. Add the garlic and ginger cubes and cook until cubes have melted and mixture is fragrant.
Add the chicken and cook until just cooked on the outside (the inside will finish cooking with the remaining ingredients).
Stir in the pepper, snow peas, and carrots and cook until slightly softened.
In a small bowl or measuring cup, whisk together the broth, honey, and soy sauce. Add to the skillet and cook until the vegetables are coated and the sauce is thickened. Serve with cooked white rice.
