My hope was to help make your Valentine’s Day a little sweeter with thoughtful, easy, yet impressive treats. Today’s vanilla crème cakelettes is the last of the Valentine’s Day treats series for this year and we’re going out with a bang!

No frosting needed!Since I already included a chocolate treat, I wanted to add a vanilla treat, in case there are any chocolate averse readers out there (gasp!). Rather than add another cupcake recipe to the interwebs (nothing wrong with cupcakes, I still LOVE them), I opted to think outside the box a little bit and decided to dust off my tartlette pan, which I haven’t used since July to make the Cannoli Tartlettes.

No frosting needed!I had picked up some cute Peeps Vanilla Crème Marshmallow Hearts a while back and I wanted to incorporate them too! To keep it simple, I merely placed them on the batter and baked them. When I tested this I had no idea how they would turn out (life of a recipe blogger!), but I tried anyway and was thrilled by the results!

No frosting needed!The cake batter did not leak from the bottom of the tartlette pan, which was a definite possibility. And, the marshmallows did not turn into a puddle, another definite possibility. The marshmallows simply slightly expanded to fill the surface area of the cakelette while also holding their shape. I couldn’t have asked for a better test result.

Vanilla Crème Cakelettes

Yields 4 cakelettes

Ingredients

  • ¾ cup (3 ounces) cake flour, sifted
  • ¼ teaspoon baking powder
  • teaspoon baking soda
  • teaspoon salt
  • ¼ cup (1 ¾ ounces) granulated sugar
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted and cooled*
  • ¼ cup milk, room temperature
  • ½ teaspoon vanilla extract
  • 4 PEEPS® Vanilla Crème Marshmallow Hearts

Instructions

  • Preheat oven to 325°F. Grease the wells of a tartlette pan and dust with flour. Place pan on a baking sheet.
  • In a medium bowl, whisk together the flour, baking powder and soda, and salt.
  • In a small bowl, whisk together the sugar, egg, and butter until thoroughly combined.
  • Add the milk and vanilla to the egg mixture and stir to combine. Whisk the liquid into the flour mixture just until all the flour is incorporated. Do not over mix
  • Divide the batter amongst the prepared tartlette wells. Gently press a heart into the center of the batter**
  • Bake for 22-24 minutes, until the center is set.
  • Allow to cool in the pan for 10 minutes. Remove the cakelettes from the pan, including the tartlette base and cool completely on a cooling rack.

Notes

*Microwave the butter for 10-15 seconds until most is melted but some solid butter remains. Stir to melt the remaining solid butter. Allow to cool until the butter reaches a stiffer consistency, resembling the consistency of mustard.
 
**No need to submerge the heart. Only about 1/3 of the heart needs to be in the batter. Storage Store in an airtight container for up to 2 days
