The other day I didn’t find myself sitting down until 5 PM, after cooking since 7 AM. I still had a dirty kitchen, but my back and feet were killing me, so I gave myself a few minutes to rest. That turned out to be a mistake because I didn’t want to get up. Alas I mustered up enough energy to clean the kitchen and then realized I had no idea what I was going to make for dinner. Gahhh!
Warren usually gets home after 7 PM and generally, it breaks my heart that he has such long hours, but on this day, I was glad. It meant that I had more time to prepare dinner :)
On days like this is when I turn to easy recipes like my Three Ingredients Pork Chops. It has come to the rescue time and time again. Yes, there are only three ingredients. And, it’s ready in less than 10 minutes!

- 2 teaspoons paprika
- ½ teaspoon unsweetened cocoa powder

In a small bowl, stir together the paprika and cocoa powder.
Pat dry the pork chops. Sprinkle the mixture over both sides of the chops.
Heat a cast iron skillet over medium-high heat. Cook each side of the chops for one and a half minutes, covered. When checked with a meat thermometer, the thickest part should read 145°F.
