30 minute Maple Mustard Pork Loin is served with tender apple nutmeg rings and is the perfect dish for your Fall dinner table.I’ve been having so much fun sharing desserts for the Fall and holiday season that I nearly forgot to throw an entree into the mix. So today I bring you Maple Mustard Pork Loin, a recipe suitable for and inspired by the Fall season. The pork loin is basted in a glaze made from Fall flavors (apple, maple, warm spices) and served with tender apples flavored with nutmeg (so much better than applesauce!). Best of all, my Maple Mustard Pork Loin can be ready in 30 minutes! And that includes the apples!

Smithfield® has a line of marinated fresh pork loin varieties for you to choose from and you can conveniently find them at your local Walmart.
In the past, I’ve used Smithfield®’s Applewood Smoked Bacon variety to make my Apple Mushroom Stuffed Pork Loin, which if you haven’t tried, what are you waiting for? :) This time around, I wanted to make a Fall-inspired glaze, so I bought the Smithfield® Original Recipe Loin Filet and sliced it into medallions. With the pork ready to go, all that’s left to prepare is the glaze, which comes together in 15 minutes. It couldn’t get easier and it presents beautifully! Seriously, your eaters will be asking when you found the time to make it!

I purchased one of the smaller loins (because there’s only two of us) and we had enough for 4 servings (about 3 medallions per serving). That means we enjoyed it for dinner and had leftovers for lunch the next day. I love when that happens :D Of course, if I had to feed a family of 4 or more, I would have purchased a larger loin, maybe even 2, in order to accommodate everyone.

Maple Mustard Pork Loin

Yields 4 servings
Servings: 1 serving

Ingredients

  • ½ cup maple syrup
  • 4 tablespoons stone ground mustard
  • ¼ cup apple cider
  • ½ small white onion, diced
  • ½ teaspoon allspice
  • 1 teaspoon ground cumin
  • 1 ½ – 2 pounds Smithfield® Original Recipe Loin Filet, cut into ½ - inch thick medallions
  • Grill seasoning blend or salt and pepper
  • 2 Golden Delicious apples, sliced into rings
  • Ground nutmeg for sprinkling

Instructions

  • In a small sauce pan over medium heat, combine the maple syrup, mustard, cider, onion, allspice, and cumin. Mix to combine and bring to a boil. Lower the heat to simmer and allow to thicken for 10 minutes.
  • Place medallions on a plate and sprinkle the top side with grill seasoning or salt and pepper.
  • Heat a cast iron skillet over medium-high heat. Working in batches, use tongs to transfer the medallions, seasoned side down, to the hot skillet. Allow to cook for 3-5 minutes, until lightly charred. Meanwhile, sprinkle the non-seasoned side with more grill seasoning or salt and pepper. Flip the medallions and baste them with the glaze. Continue cooking until the internal temperature reaches 150°Transfer the pork to a clean plate to allow to rest. Repeat with the remaining medallions.
  • While the pork medallions are resting, reduce the heat to medium. Cover the skillet surface with one layer of apple rings and sprinkle with nutmeg. Cook for 1-2 minutes and turn over to cook the second side. The apples are done when tender, but not soggy. Repeat with any remaining apples.
  • Serve pork medallions immediately with apples.
