They can enjoy them themselves or leave some out for guests to snack on. The honey flavor really shines thru without being overly sweet.
Honeycomb and Nut Brittle with REAL honeycomb make the perfect gift for your candy loving friends.The base of this Honeycomb and Nut Brittle is a combination of honey, sugar, and water. BUT what makes these extra special and worthy of gifting for the holidays are the honeycomb pieces nestled within the brittle. Before making this brittle, I have never tried honeycomb. I enjoyed eating the honeycomb by itself, in little bite-sized pieces, but you can also spread it on hot toast and biscuits! Who knew? I’m dreaming of spreading it on waffles the next chance I get! I think adding bits of honeycomb in the brittle really gives it that “gourmet” touch :) I also added candied pecans and dried cranberries for some color and a festive touch.

With each bag, I will also be including a jar of Don Victor® Honey and instructions to make the brittle. All of my friends will be able to recreate the brittle at home for entertaining or to enjoy themselves. So fun, don’t you think? I tell ya, homemade gifts are the best :D

Honeycomb and Nut Brittle

Yields One 17.25" x 12.25" sheet
Servings: 1 whole sheet
Calories: 1583kcal

Ingredients

  • 1 ½ cups sugar
  • ¼ cup Don Victor® Honey, look for the Don Victor® Orange Blossom Comb Honey Globe Jar
  • ¼ cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda**
  • ¼ cup dried cranberries
  • ¼ cup candied pecans, roughly chopped
  • Honeycomb from 1 Don Victor® Orange Blossom Comb Honey Globe Jar, roughly chopped

Instructions

  • Lightly grease one 17.25" x 12.25" rimmed baking sheet with cooking spray or a brushing of vegetable oil.
  • In a medium sauce pan that is at least 6-inches deep* combine the sugar, honey, water, and vanilla. Over medium heat, bring to a boil, whisking constantly.
  • Stop whisking and lower the heat to medium low. Insert a candy thermometer and monitor until the mixture reaches the hard crack stage (300F). Remove from heat immediately and add the baking soda, whisking about 3 times just to combine.
  • Pour the mixture into the prepared pan without spreading. Sprinkle on the cranberries, pecans, and honeycomb. Set aside to harden, about 30 minutes. Break into pieces.

Notes

*A deep sauce pan is very important because the mixture will foam and rise.
**Make sure there are no lumps.
