Chicken Waldorf Salad Tart

Yields 1 12” x 10” Tart

Ingredients

Chicken Waldorf Salad

  • 1 frozen puff pastry sheet, thawed
  • 2 ½ cups arugula spring mix
  • 2 ½ cups spinach leaves
  • ½ cup dried cranberries
  • ½ cup pitted dates, chopped
  • ½ cup walnuts, chopped

Blueberry Lemon Dressing

  • ¾ cup vanilla yogurt
  • 2 tablespoons Smucker's Fruit & Honey Blueberry Lemon Fruit Spread
  • ½ lime juice
  • ½ teaspoon salt
  • 1 tablespoon olive oil

Instructions

Chicken Waldorf Salad

  • Roll out puff pastry sheet into a 12” x 10” sheet. Create a ½ - inch border by folding over the dough along each side. Puncture the center area multiple times with a fork to allow steam to escape. Bake according to package instructions*. Allow to cool completely.
  • Combine the arugula, spinach, cranberries, dates, and walnuts. Drizzle with the blueberry lemon dressing and toss.
  • Spread over the cooled puff pastry and cut before serving.

Blueberry Lemon Dressing

  • Whisk together all the ingredients until smooth and combined.

Notes

*The center area should not rise higher than the border. If it does, place a heavy baking dish over the area for 5 minutes to flatten.
